Pumpkin Spice Gingersnap Truffles


This pumpkin season I have been on a quest for some different pumpkin recipes.  You may remember my month long pumpkin craziness back in 2011.  Well I had pretty much made any and everything you can think of pumpkin.  BUT I knew there surely had to be a few I missed.

And I was right!  Check these out.  Truffles with pumpkin spice?  Oh yes.  These are super rich with semi-sweet chocolate and a kick of pumpkin spice.  And throw in gingersnap cookies for a little crunch and added goodness. 

I had never made truffles before so this was FUN.  My one and only tip is the chocolate mixture must be cold.  My kitchen tends to get pretty warm so I had to work in batches.  I rolled a few at a time quickly putting the chocolate mixture back in the fridge......about every 15 minutes or so until I was done.  It was a mess, but worth it.  The truffles are then rolled in finely crushed gingersnap cookies and or cocoa powder.  As I rolled I discovered it was easier to make a ball, roll it in gingersnap crumbs and then continue to make a neater ball.  After that roll again in either gingersnaps or cocoa.  Or both!

The recipe comes from Better Homes and Garden.  I did slightly change it up by adding a few more gingersnaps and pumpkin spice.  If you are going to have pumpkin spice in your name the taste has to be there.  So I made sure of that.  The recipe called for 1/4 teaspoon--I added a couple more shakes of pumpkin pie spice.  You can decide what taste best to you.   Hopefully I can hang on to these for our Fall Party on Sunday.

1. Thank God for rain!!!  It is raining now and suppose to rain all day and tomorrow.

4.  Short school day.
5. Sunday is the first official day of FALL!!  Can't wait to decorate outside with this vintage wheelbarrow!  It was headed to the trash and as usual I saved it.
