Scrumptious Saturday-Mediterranean Wrap

I haven't had a Scrumptious Saturday post in like FOREVER and I am not making any promises, but I have one for you today!  Enjoy and Happy Saturday to you.
 
 
You all know when I make something that taste good I want to share the recipe.  And if someone else agrees that it is good, well I must share! 

Well this is one!  And just what I needed to add to my lunch menu. 

I recently had this at a local café and loved it!  I knew all the ingredients and knew I could easily make this at home for a fraction of their price.  It is a pretty healthy lunch and quite filling I will say.

Here is what is in the wrap.

-spinach wrap
-lettuce of choice (café used a spring mix, I used what I had-iceberg, but think a green leaf would be nice)
-black olives
-cut up cucumbers
-cut up tomatoes
-plain hummus
-guacamole
-Feta cheese


First add a schmear of hummus and guacamole.  Next add all other ingredients to your liking.  I will say though do not go heavy on hummus and guac, it will make the wrap too soft and it tears when rolling up.



Fold wrap sides towards your veggies a tad and then roll from one end.  I bought Mission brand and on the back of the package it showed me how to roll.  After it is rolled up cut wrap in half or leave whole.

Just this alone was plenty for me, but you could add a cup of soup or fruit if you need a little something more.  Salt and vinegar chips would be really good too.


When your usual lunch gets boring give this a try.
