First let's take care of the important stuff. The Chocolate Lasagna! Just kidding Mom and all you other mothers out there. The important stuff is by far Mother's Day.
Let me start by saying Happy Mother's Day to my amazing Mother. And all you other super MOMS! I hope you all have a wonderful day. I hope you eat chocolate or something ooey and gooey. I hope you get to take a nap and enjoy it as much as I will. And I pray you do not have to cook. If you cook anything make sure it is something simple like Rotel Dip!
Preparing a dessert is different though. This mother will make her own dessert and can not wait to taste it!!
I had the pleasure of eating Chocolate Lasagna at The Olive Garden many years ago. I'll never forget it either. It was a life changing experience. I was out of town for work, all alone on my birthday. I had never been out to eat all alone. And certainly never on my birthday. I knew it called for a celebratory dessert. What else would you order when all alone on your birthday and you see Chocolate Lasagna on the menu? It called my name. It was divine! To die for! Sadly, I don't think they serve it anymore. And this recipe is a little different. No baking required, but I know it will be the perfect dessert for Mother's Day!!!

It is an easy one and I am making do with a few store bought ingredients. Busy weekends sometimes call for shortcuts. Plus I want to make sure I have plenty of time to spend with these two little boys who made me a MOM!

Whatever you do this weekend if you are a MOM (and even if you are not!), enjoy yourself. Sit OUTSIDE in the sun for a bit and count your blessings. If it is raining on Sunday sit OUTSIDE under an umbrella and count your blessings. Just get outside and have some fun!
And praise the Good Lord for the many blessing of being a MOM!

Oh I'm off to read about the chocolate lasagna, which I have never heard of...where have I been? I'm working on Mother's Day, but Sam and his brother have made a lovely feast for their own mother and someone will bring me a plate of food! Not a bad deal!
The ingredients are nothing special, but everything I LOVE!
I made it yesterday for us to have on Sunday. I couldn't take it anymore.
So last night before bed I snuck in the garage fridge where it is and had a taste test.
SHHHHH, don't tell. Boy oh boy is it good! You must try.
