Fresh Fig Crostata

Oh sweet figs.  They scream summer time!  We are blessed to have a neighbor that graciously shares her figs.  She asked us months ago if we would like some since she gets so many. We excitedly answered, YES PLEASE!  Well they are getting ripe now and we are reaping the harvest.


As they ripen she picks them and hands them over the fence.  What a treat for us!  Over the weekend she gave us this batch and I knew I had to make something (fast) while they were ripe and ready.  I am not the best pie making, but knew a crostata would work for me.

A rustic pie is what I would call it. 

Not being the best pie maker I am not the best pie crust maker either so I did use a store bought pie crust.  Judge if you like, but it works. 

Rough chop about 4 cups of figs and set aside.  In another bowl I added about 3/4 cups sugar, 2 tablespoons flour, 1/2 teaspoon salt and 1/2 teaspoon cinnamon; mix.  Add figs to sugar mixture and toss making sure to coat figs well.

Lay pie dough in pie plate or on pan.  Add figs to the center.  Drizzle on 1-2 tablespoons of fresh lemon juice.  And then add one tablespoon of butter cut in little bits.  Fold in dough....no particular way, shape or form.  A crostata is rustic looking so just go with the look.


Bake at 350 for around 45 minutes or until crust is a golden brown.  The figs will be hot and bubbly.  The juice from the figs and sugar will be AMAZING!  Allow to cool and then cut this goodness.


Plate up a slice, find a nice spot to sit (maybe with a cup of coffee) and truly look at the beauty of this slice of rustic pie.  Thank God for this summer fruit that is about to enter your mouth.  Enjoy the figs with all the sugar and juice and then that CRUST!!!  Enjoy that last bite where the crust is super thick and there is lots juice and maybe a fig hidden inside!  I ♥ crostata crust!

Store bought crust or not...I am impressed. I've never had a fig in my life...let alone in pie form. Yum!
