Summer Dips-Black Bean and Corn Salsa

When warm weather arrives I like to eat lighter meals and snacks.  In the summer we love snacking on homemade dips and spreads. In fact, they can be lunch.  I am now on a quest for simple and tasty summer dips.  You can never have too many dip recipes so I'll share with you what we discover over the next month or so.

Dips are perfect for any occasion. And easy to carry along to many summer time activities.....BBQs, tossing in the cooler to head to the beach, lake or pool, 4th of July party, appetizer when friends or family come over or just to have in the fridge for a quick snack.

This Black Bean and Corn Salsa is one I have been making for years.  Super simple.  And only four ingredients! It is so fresh and perfect for warm summer days ahead.



Black Bean and Corn Salsa
Ingredients:
1 can black beans-rinsed and drained
1 can corn-drained (I like to use yellow and white)
tomatoes to taste (garden fresh would be grand!)
cilantro to taste (the more the better)

Mix all together.  Season with sea salt and fresh ground black pepper.  Serve with tortilla chips and you are good to go.  Enjoy!
