Simple Fig Jam

Oh Sweet Figs!!!
 

You might say I am on a FIG kick.  But have no worries, it will not be as big as my pumpkin kick back in September 2011 when I did a month of pumpkins .  With figs I can't help it!  Our sweet neighbor keeps handing 40 oz cups of figs over the fence.  I refuse to sit by and watch these sweet figs go to waste.  So you can count on more figs recipes coming soon.
 
This simple fig jam is wonderful on toast or biscuits.  And it is also scrumptious on crackers with cheese.  Look out this can be addictive.

 Simple Fig Jam
  • about 4 cups figs, stemmed and sliced any way you please or left whole
  • 1/2 cup sugar
  • 1 tablespoon fresh lemon juice

    1. Combine figs and sugar in saucepan and let sit, stirring occasionally for around 15 minutes (until sugar has mostly dissolved and figs are juicy).
    2. Add lemon juice to figs. Bring to a boil, stirring until the sugar has completely dissolved. Simmer, stirring occasionally, for around 15-20 minutes (until fruit is soft and the liquid runs off the side of a spoon in thick, heavy drops).
    3. Spoon jam into jars, seal jars and let cool to room temperature. Store jam in the refrigerator.  Can be stored in fridge for 3 months, but I doubt it will last that long. 


    And for those wondering about my star players............

    Matthew is playing for the Knicks and Ryan is playing for the Heat.  They are loving it!  They talk non-stop on the way home about their day.  And once we got home they eat and eat and eat (and then eat some more!).  And then it hits them.......after day one Ryan was pretty wiped out.  Matthew does NOT nap, but did relax in bed reading books.

    Yes on the floor with legs and butt under his bed.  He was comfortable.

    I have got to try figs! Those boys are growing like weeds!
