Cooking with the Trinity!

It is officially cooler weather around here.  Well at least cool enough for cooking with the trinity. 
If you are not familiar with what I am talking about then let me explain.
"The Trinity," is a Cajun vegetable combination using equal parts bell peppers, celery, and onion.
It is most commonly used to flavor soups, stews, and sauces. 
But here in this Cajun(OK part Cajun...by name for sure!)household it is most commonly used to make GUMBO!  Oh how we have longed for this day to come.  Matthew has been asking since summer.  Now you can surely make gumbo in the summer time, but because it is more like a soup, we prefer it in the Fall and Winter months.  And we will have it at least once maybe twice a month.
Many, many years ago I use to make gumbo, but after Brant started making it I gave it up.  He makes a mean pot of gumbo.  And the boys LOVE it.  We started them young on gumbo and they are still loving it.
They have yet to try the boiled eggs in it, but one day.  Yes boiled eggs in the gumbo.  Along with chicken and andouille sausage.  Served over rice.
Ca c' est  bon(sa say BOHN)-That's good! 
I told the boys what Daddy was going to cook this evening and I got cheers from both. 
Matthew announced, "Gumbo? Alright, that's my fravfrite(favorite)!"
Yes how we love when Daddy makes his famous gumbo.   Cool weather and gumbo just go together...good times. 
Laissez les bons temps rouler-That means let the good times roll.
And they are gonna be rolling this evening cooking with the trinity!

Guess what I have cooked today....
GUMBO! We are anxiously awaiting Brent so that we can feast on our favorite autumn/winter meal. I also made a wonderful pumpkin soup for lunch and also homemade granola for our breakfast this week. Busy cooking and walking(for that hot cocoa). Don't you just love preparing wholesome seasonal food for your family!?!
