Kiwi Cilantro Margarita


Warmer weather calls for refreshing beverages.  The boys had cherry juice with Sprite, but Brant and I tried a new drink.  Now before you knock it you must give it a try.  If you are in the mood for something different this margarita is great.  Light, refreshing and full of flavor. 


NOTE: Recipe below is from QVC's David Venable.  We did change it up just a tad using white grape juice because it was all we could find.  You can bet I will make them again once I find white cranberry.  And we also made them using the seeds and "meat" of the kiwi as you can tell from the picture above.  We made them without and felt like it had no taste.  So we added the "meat" and seeds back in and it was perfect.

Ingredients:

  • 6 kiwis, peeled and quartered
  • 1 cup white cranberry juice
  • 4 cups ice
  • 1/4 cup loosely packed fresh cilantro, stems removed
  • 3/4 cup tequila
  • 2 Tbsp triple sec
  • 1/4 cup sugar

Preparation:

  1. Place the kiwis and the white cranberry juice in a blender. Blend on low speed for 15-20 seconds, making sure not to dissolve the seeds. Strain the mixture through a fine mesh colander and discard the seeds.
  2. Place the strained mixture back into the blender and add the ice, cilantro, tequila, triple sec, and sugar and blend until smooth. Serve immediately.
